Crustless Quiche Recipe

This recipe is an awesome substitute for the typical continental breakfast. We modified the traditional French recipe by removing the crust (and carbs) and adding nutrient-packed veggies. We promise this will become a new household favorite!


CRUSTLESS QUICHE

Start to finish: 55 minutes (15 minutes active)
Servings: 5

5 large eggs
1/4 cup chopped yellow onion
1/2 cup almond milk
1 cup chopped spinach
1 medium bell pepper
1 cup Imo’s provel cheese
1 teaspoon olive oil
2 teaspoons sea salt
1 teaspoon crushed red pepper flakes
1/2 tablespoon garlic powder
Salt and pepper to taste

Preheat oven to 375 F. Set stove to medium-high heat. Sauté pepper, onion and spinach until cooked. Remove vegetables from burner and set aside until cool. In a large bowl, whisk together eggs, milk, onion, pepper, spices, cheese and vegetables. Grease a 9-by-9-inch nonstick oven pan and pour ingredients into pan. Set the pan on the middle rack of the oven for even cooking, and bake for 40 minutes. To check doneness, stick a fork into the center of the pan. If the fork comes out clean, it is ready. If not, return to oven and keep checking in 5-minute intervals. Add salt and pepper to taste. Enjoy!

Note: You can add your favorite vegetables, like mushrooms or zucchini for additional flavor and bite!
