Apple Pie Bread (as featured on The Stir)

From Lynda Carter’s iconic turn as Wonder Woman, to otherworldly warriors like Ellen Ripley and Sarah Connor, to the self-proclaimed “deadliest woman in the world,” we salute the most celebrated female ass-kickers who’ve captured our imagination.

But as these ladies show us, you don’t have to be an Amazon princess or have superhuman powers to prevail over the bad guys. Sometimes, all it takes is good instinct, savvy and smarts.

For dessert, we continue to savor the fall harvest with another apple-centric treat. Last week, we shared a recipe for oh-so-yummy Salted Caramel Apple Pie Bars. This time around, we present you with Apple Pie Bread, which features a similar flavor profile as the bars (save the caramel), with the crispness of apples and the warmth of cinnamon.

The recipe comes together quickly – and will probably be gone just as quickly – but you’ll find whipping up another batch will be as easy as pie (bread)!

APPLE PIE BREAD

Ingredients

  • 1/2 cup brown sugar packed
  • 1-1/2 t cinnamon
  • 2/3 cup sugar
  • 1/2 cup salted butter (1 stick), softened to room temperature
  • 2 large eggs
  • 2 t vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1-1/2 t baking powder
  • 1/2 cup milk
  • 1-1/4 cup peeled and chopped apples (into 2-inch chunks), about 2 small apples (we used Honeycrisp; Fuji and Granny Smith also work well)

Directions

  1. Preheat oven to 350 degrees. Spray a large loaf pan with nonstick cooking spray like Baker’s Joy.
  2. In a bowl, mix together brown sugar and cinnamon. Set aside.
  3. Using a stand mixer (or in a large bowl with an electric mixer), mix together sugar and butter until smooth.
  4. Stir in eggs and vanilla extract until fully combined.
  5. Stir in flour and baking powder and milk. Mix until combined.
  6. Pour half the batter into prepared loaf pan.
  7. Cover batter with half the diced apples. Press the apples down slightly into the batter.
  8. Sprinkle the apples with half the cinnamon sugar mixture.
  9. Pour the remaining batter over the apple layer.
  10. Top with remaining diced apples (again, pushing the apples gently into the batter).
  11. Sprinkle the remaining cinnamon sugar mixture on top.
  12. Bake for about 50 to 60 minutes (until a toothpick inserted comes out clean).
  13. Allow to cool completely before removing from baking pan.
