Two St. Louis chefs are joining forces next month for a good cause: Chefs Michael Shadwick of Honey Bee’s Biscuits + Good Eats and Snoop Hollins of RootedBuds plan a one-day-only menu on June 2 for Brunch of Champions, a fundraiser for PROMO Missouri.
PROMO is the state’s LGBTQ+ public policy and advocacy organization and both chefs feel strongly about the fight for equality across Missouri.
“Being a queer woman in the world has always empowered me to be a part of things that are special and supportive of my community, because of the different things we can be faced with,” Hollins said. “It brings me true happiness that people will get to experience the love RootedBuds puts into the food we share and we’re thankful for the opportunity.”
Shadwick agrees with the sentiment, saying his role at Honey Bee’s has shown him the value of “bee-ing” himself through his passion, food.
“It’s important for people to have a comfortable environment where they are allowed to express themselves and be accepted,” he said.
Brunch of Champions takes place from 9:30 a.m. to noon on Sunday, June 2, at 4 Hands Brewing Co.
Hollins and Shadwick created a menu for the event that centers around a collaborative item, a Mini Vegan Jackfruit Honey Biscuit made with smoked jackfruit topped with a crisp apple slaw and BBQ sauce on a honey-glazed biscuit. Plus, guests will be able to create their own biscuit sandwiches at the “biscuit bar.” In addition, a grazing board and other food items are on the menu, as well as an open bar with craft beer from 4 Hands Brewing Co. and cocktails from 1220 Spirits.
Tickets ($100 per person, $25 for students and older adults) are available through PROMO’s website.
