Dark Chocolate-Covered Strawberries (as featured on The Stir)

In honor of excellent pairings, we present you with a classic: dark chocolate and strawberries. Trish shares her longtime recipe, which calls for fresh strawberries and only three other ingredients – that’s it!  Well, except maybe a glass of spicy, fruit-forward zinfandel or sparkling rosé…

DARK CHOCOLATE-COVERED STRAWBERRIES

Ingredients:

  • 2 cups bittersweet dark chocolate chips (60% cacao)*
  • 6 T butter
  • 1/2 t vanilla extract
  • 1 quart (2 pounds) fresh strawberries with stems, rinsed and dried well
  • finely chopped nuts, optional

*Ghirardelli or Godiva chocolate preferred; you may also substitute semi-sweet chocolate chips.

Directions:

  1. In microwave-safe bowl, heat chocolate pieces on high power for 2 minutes. Stir well with rubber spatula.
  2. Continue heating in 30-second intervals until fully melted (do not burn).
  3. Stir in butter and vanilla, and microwave another 30 seconds or so, until butter is melted. Stir until smooth.
  4. Dip strawberries in chocolate while firmly holding on to stem with your fingertips, swirling to coat each berry evenly. If desired, roll berry in nuts.
  5. Place coated berry on waxed paper and let harden on a cool, dry countertop (dining room table works fine, too).

Note: You will likely have leftover chocolate for more dipping fun. Try dipping other fruit or hard pretzels. Or, make nut clusters by mixing in a handful of whole nuts (unsalted peanuts, cashews, almonds, etc) with the chocolate and scooping out tablespoons of clusters onto waxed paper to harden.
