Four Seasons Unveils Special Menu Created and Crafted by Women

A special menu created and crafted by women is taking center stage at Cinder House at the Four Seasons Hotel St. Louis.

In celebration of Women’s History Month, the Four Seasons commissioned its female-led food and beverage team to create experiences that showcase their own talents.

Throughout the month of March, Cinder House, the acclaimed fine-dining restaurant perched on the hotel’s eighth floor, has unique food and drink offerings from an entrée shaped by a grandmother’s love of cooking to a Frida Kahlo-inspired dessert to women-made wines.

Offerings for Women’s History Month include a special menu created by Cinder House sous chef Marisol Santiago, who found inspiration in the colors and bold flavors of her Latin heritage. To complement the food, advanced sommelier Alisha Blackwell-Calvert selected wines from female winemakers and producers to pair with each dish.

First Course

  • Beet Carpaccio – Thinly sliced roasted beets, calamansi vinegar caviar, cashew cheese, arugula, toasted pistachios ($20)

Wine Pairing: Château Coupe Roses 2021 Frémillant Rosé. Minervois, France ($12.50/glass)

  • Lamb Arancinis– House-made lamb sausage, sweet pea mint purée, pickled vegetables salad ($22)

Wine Pairing: Sister’s Run 2020 “Epiphany Vineyard” Shiraz. McLaren Vale, Australia ($14/glass)

Second Course

  • Seafood Ravioli – Homemade pasta infused with squid ink, creamy saffron sauce, English sweet peas, crispy onions ($52)

Wine Pairing: Dashe Cellars 2021 “Vineyard Select” Zinfandel. California ($18/glass)

  • Skirt Steak – Creamy sweet plantain mousse, crispy asparagus, chimichurri sauce, demi glaze ($49)

Wine Pairing: Forth Vineyards 2018 “Histoire” Cabernet Sauvignon. Mendocino, California ($16/glass)

For dessert, there’s Limones Rellenos de Coco ($12), coconut-stuffed limes, created by assistant executive pastry chef Tiffany Gilmore in honor of Frida Kahlo in a playful modern take on one of the iconic Mexican artist’s favorite desserts.

A pre-prohibition era cocktail, The Clover Club ($20), has a lovely pink hue achieved with a balanced mix of gin and raspberry. The Clover Club is also the name of a bar in Brooklyn, owned by Julie Reiner, an acclaimed author, influential modern cocktail innovator and a personal inspiration to Cinder House bar supervisor India Stevens.

The entire three-course menu, including the cocktail and wine pairing for the first and second course, can be ordered as a prix-fixe meal for $125 per person.  Each offering can also be ordered a la carte.
