The space formerly occupied by popular Clayton eatery Bar Les Freres will become the new Bistro La Floraison.
The restaurant – now under the ownership of Take Root Hospitality (TRH), the same company that owns Vicia, Winslow’s Table and Taqueria Morita– will open to the public on July 13.
TRH owners Michael and Tara Gallina and Aaron Martinez say they plan to retain the space’s French-inspired ambiance and a few culinary offerings from Bar Les Freres, including Gougeres (French cheese puffs), oysters and French 75 cocktails. But there will also be new items like chilled seafood, charcuterie and caviar service, with a focus on top ingredients and attention to detail.
Other planned menu offerings include Smoked Salmon Rillette with crème fraiche, chives and toasted brioche; Tomato Salad with whipped goat cheese, basil pistou and toasted levain bread; and Short Rib Au Poivre with potato pave, arugula and salted peppercorn cognac jus.
Patrick Fallwell (formerly of Vicia) will serve as head chef, with all culinary elements overseen by Michael Gallina and Martinez. Christina Schlicht (formerly of Winslow’s Table) will take on the role of general manager.
Bistro La Floraison, located at 7637 Wydown Blvd., is the fourth restaurant owned by TRH, following the opening of Taqueria Morita last month.
The restaurant, which will be open Wednesday through Sunday beginning July 13, is hosting a series of ticketed events on July 9 and 10 in advance of its public opening.
