SALMON CAKES
Start to finish: 24 minutes (10 minutes active)
Servings : 4
1 large egg
1/2 cup chopped red onion
1/2 cup crushed saltine crackers
1 14.75-ounce can of Wild Alaskan Pink Salmon
1 tablespoon garlic powder
1 teaspoon granulated sugar
1/2 tablespoon salt-free lemon pepper
1 tablespoon olive oil
Salt and pepper to taste
Drain approximately 3/4 of the liquid from salmon. Combine seasonings, egg, salmon, onion and crushed saltine crackers in a large bowl. Mix ingredients and form four patties. Cook seven minutes on each side over medium-high heat. Plate, and add salt and pepper to taste. Garnish with sauce of your choice ( I prefer Bertolli Italian Glaze with Vinegar of Modena ).
Note: Add cayenne pepper or hot sauce to the mixture for a nice kick!
