Upside-Down Peach Cake (as featured on The Stir)

Peaches are the quintessential summer fruit. In fact, if summer had a flavor, it would most certainly be peachy keen! For this edition of The Stir Podcast SIP Series, we feature an easy, breezy peach cake that brings you the taste of summer in every bite.

This summer, with the world in the midst of a pandemic, the highly anticipated film version of the Broadway phenomenon, “Hamilton,” was released globally over the Independence Day weekend and gave the streaming service Disney+ an instant hit.

The Lin-Manuel Miranda musical, which opened in 2015, shattered box-office records on The Great White Way, and is one of the most acclaimed musicals of all time, winning 11 Tony Awards, including Best Musical, and the Pulitzer Prize for Drama.

But what was the movie musical landscape like before “Hamilton” turned its world upside down?

The Binge Besties show off their Jerome Robbins finger snaps as they reenact an iconic movie musical scene.

In the history of film, less than a dozen musicals have won the Academy Award for Best Picture, most of them awarded more than 50 years ago. The last time a musical received Oscar’s top prize was 2002’s “Chicago.”

To celebrate summer, the show’s featured sweet treat is Peach Cake, made with sun-ripened peaches fresh from the orchard, along with ingredients that you’re already likely to have on hand in your fridge and pantry. This cake will have you enjoying the lazy, hazy days of summer all season long!

UPSIDE-DOWN PEACH CAKE

Ingredients

  • 3/4 cup butter, softened, divided
  • 1/2 cup packed brown sugar
  • 2 cups fresh peaches, peeled and sliced
  • 3/4 cup sugar
  • 1 large egg, room temperature
  • 1 t vanilla extract
  • 1-1/4 cups all-purpose flour
  • 1-1/4 t baking powder
  • 1/4 t salt
  • 1/2 cup 2% milk

Directions

  1. Melt 1/4 cup butter; pour into an ungreased 9-inch round baking pan. Sprinkle with brown sugar. Arrange peach slices in single layer over sugar.
  2. In a large bowl, cream sugar and remaining butter until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Spoon over peaches.
  3. Bake at 350° for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.
