Blueprint Coffee has plans to set up shop in southwest St. Louis, with a new 11,000-square foot headquarters that will house its roasting facility, interactive training center and quality control lab.
The new roastery will be located in the Tiffany-Botanical Heights neighborhood at the corner of 39th and Blaine streets, with an opening date tentatively set for some time next year.
The space, originally a Kroeger grocery store, will serve as Blueprint’s roasting facility for all coffee sold at its coffee bars, as well as through wholesale and online.
The new roastery is anticipated to increase coffee roasting capacity by 25% from 2,000 pounds to 2,500 pounds per week. Climate-controlled storage space for “green coffee,” pre-roasted raw coffee beans, will increase from 4,200 to more than 35,000 pounds, eliminating the need for offsite storage and reduce emissions and transportation costs.
Blueprint, which currently has three coffee bars in the area, was founded by a collective of former baristas, a roaster and a coffee enthusiast with the goal of increasing transparency and quality in St. Louis’ coffee market. The brand selects only a few coffees at any given time to ensure freshness and to focus on precise roasting, brewing and training methods.
