Nick Bognar to Offer Fresh Take on Sushi at New Restaurant on The Hill

A new sushi restaurant from acclaimed St. Louis chef Nick Bognar will open this fall on The Hill.

 

The restaurant, called Sado, will be located on Shaw Avenue, where the historic Giovanni’s on the Hill held court for decades.

Bognar, who is chef/owner of the highly regarded Indo restaurant, purchased the building at 5201 Shaw with his restaurateur parents. We’re told the family’s current sushi eatery, Nippon Tei, will evolve into the new Sado when it opens.

Sado, which means “ceremony” in Japanese, will feature some Nippon Tei classics, such as its signature rolls, sashimi and nigiri. It will also highlight Bognar’s training and skill in modern Japanese cooking, allowing his team to explore more in sushi, from Nippon Tei’s popular omakase dinners to fish butchery and its aged fish program. Omakase is a multicourse experience during which the menu is selected by the chef. 

 

The new restaurant will also have expanded spaces, including a large sushi bar, front bar and lounge.

 

Nippon Tei, located in West St. Louis County, will stay open until this fall. The new Sado is expected to make its debut on The Hill sometime in the fall.
