Acclaimed Local Chefs Debut Eateries at City Foundry

Two new kitchens helmed by acclaimed local chefs have made their debut at the Food Hall at City Foundry STL, the much talked-about dining destination that opened in Midtown in August.

Chicken Scratch is a rotisserie-chicken concept from Nate Hereford, the former executive chef of Niche. The menu offers diners the option to get quarter, half or whole chickens slow-cooked in a French Rotisol rotisserie oven. Other menu items include the Chicken Dip with marinated kale, pulled rotisserie meat and a side of “scratch jus” for dipping and a Fried Chicken Breast Sandwich with a choice of sauces, dill pickles and cabbage. A selection of seasonal sides served with house-made sauces is also on the menu.

Dishes from Mexico’s Yucatán region is the focus of Sureste Méxican by Alex Henry, who previously served as executive chef of Nixta and Cleveland Heath. Sureste, Spanish for “southeast,” highlights cuisine from the southeastern coastal region of Mexico with dishes like  Cochinita Pibil, made with achiote and citrus marinated pork roasted overnight in banana leaves and served as either a taco or torta; Pavo en Chilmole, local turkey stewed in burnt chili mole with pork meatballs and hard-boiled egg; and Salbut, a thick fried tortilla topped with roasted turkey, pickled red onions and jalapeno, lettuce, avocado and tomato. The kitchen will also have several types of tamales and ceviche, as well as breakfast offerings, on the menu with other rotating items.

Both kitchens officially opened to the public Oct. 20. Like all kitchens at City Foundry’s Food Hall, the two new additions will have their own hours of operation. For additional details, including a complete list of restaurants, visit the City Foundry STL website.
